Blueberry & Lavender Mojito

Adapted from Market Fresh Mixology by Bridget  Albert
Recipe makes one cocktail

“Fading fast.  Get them while they last.”  That goes for the blueberries AND the drink that has enormous potential to become a signature summer cocktail.  Fresh and lovely tasting, this can convert even those tough “I don’t drink mojitos” people. I advise making extra simple syrup so that you have it on hand!

Make the lavender simple syrup:
¼ cup of organic dried lavender
½ cup of super fine sugar
1 cup of water

Bring all ingredients to boil on medium heat. Reduce heat and simmer for about 15-20 minutes, stirring occasionally. Let it cool and strain in a clean container. Store in the refrigerator.

For the cocktail:
10 to 15 mint leaves
1 oz lavender simple syrup
1 oz fresh lime juice
15 to 20 blueberries
1.5 oz white rum (Full disclosure would be to use 2 oz of rum for a bigger kick; also, Santa Teresa Claro Rum comes highly recommended)
Club soda

In a nice tall glass muddle the mint, lavender syrup, lime juice, blueberries and rum.  Fill the glass with crushed ice and top with club soda.  This one’s a real doozey- enjoy it!
